I am not a huge fan of spinach, especially cooked spinach, so I was a little reluctant when making this recipe. I am glad I did! Not only did I enjoy it but so did my anti-healthy eating husband. However, I did have to withhold the part about this recipe containing cottage cheese (still haven't told him, hope he doesn't read this) or he would have hated it from the start. We had these for dinner but they would also make a great appetizer... and I think they turned out to be one of my prettier dishes! Without further ado... here is the recipe for:
Spinach Mini Pies
Ingredients
12 wonton wrappers
1 cup non fat cottage cheese
1/2 cup mozzarella cheese
1/4 cup chopped onion
8oz frozen spinach (thaw and drain well)
3 eggs
1/2 tsp black pepper
1/2 tsp garlic powder
Directions
1. Spray with Pam (non-stick spray) and line muffin pan with wonton wrappers.
2. Combine the rest of the ingredients and split evenly into the muffin cups.
3. Bake for 30-40 minutes in a preheated oven at 375 degrees.
4. Eat with no guilt!
The BEST part of this recipe? The calories!!!
Makes 12 Mini Pies
1 serving = 68 calories (7g Carbs, 2g Fat, 5g Protein)



















I don't mind a lil cottage cheese when it is cooked in with things that mask the taste. My mom used to make lasagna with cottage cheese instead of ricotta.

DeleteThese look yummy, will be making them as a Superbowl appetizer along with our regular fav.'s we are a big fan of Pita and this maybe another way to do it in little versions, think I will try them using Feta cheese...yummy!
