Greek Yogurt Banana Cream Mini Pies

My most popular post and Pinterest sensation (having THOUSANDS of repins) is the Greek Yogurt Cheesecake recipe.  There is a reason why this recipe is so popular, they are delicious! But I got to thinking about variations I could try with the recipe.  Behold, the Greek Yogurt Banana Cream Pies!  They are simply delectable and now one of my favorites.  These mini pies are great "quick" on the go snack and the slice of banana within eat pie brings out the flavors terrifically!  It is guaranteed to be one of your favorites as well.

Greek Yogurt Banana Cream Mini Pies

Ingredients

12 ounces plain Greek Yogurt
1 package sugar free/fat free banana cream instant pudding mix
1 cup fat free milk
1 banana
5 graham crackers
3 Tbs butter (I used I can't Belive It's Not Butter)
12 cupcake liners

Directions

1. Crush graham crackers and mix with melted butter.  In a cupcake pan, add the liners and add the graham cracker mixture evenly into each.

2.  Slice banana and add one slice on top of graham cracker mixture to each, as shown below.

 3.  Mix yogurt, pudding mix and milk and scoop on top covering the banana and graham cracker mixture.

4.  Refrigerate 30-45 minutes and Enjoy!
