Healthy Chocolate Mug Cake with Peanut Butter Filling

I’ve seen these mug cake recipes all over Pinterest lately and thought they looked delicious and really easy to make.  However, I have never attempted to make one because they looked way too fattening!  Well folks, I found a recipe that is actually good for you!  The calorie content is not exactly “low” but it is SO much better for you than the originals.  The cake is low in carbs, high in protein and filled with healthy fats.  And the best part, it is moist and simply delicious!

Healthy Chocolate Mug Cake with Peanut Butter Filling
Ingredients
1 Scoop of Chocolate Protein Powder
1 Tbsp unsweetened cocoa powder
1 tsp sugar or sugar substitute
1/4 tsp baking soda
pinch of salt
1 egg white
2 Tbsp Almond Milk
1 Tbsp Peanut Butter
Directions
1.  Add all the ingredients (but the peanut butter) into a mug and mix until it is smooth.

2. Drop the scoop of peanut butter into the center of the mixture and cover with the batter.

3. Place mug into microwave for 1 minute.  You might need to pause microwave in the middle of the cooking process to stop it from overflowing.  If this happens, simple push down the cake and resume cooking.

Mine came out horrific too. We tried it several different ways. Mine reminded me of eating a fiber bar. :/

Can you list the nutrients and calories and if you could let us know the size of the scoop you used. Would it work to put whole wheat flour instead of the protein?
