Have you heard of the Good To Know initiative by Unilever? They understand there are many misconceptions out there on soft spreads so they have taken it upon themselves to school us! Why is their spreads Good To Know? Well for starters, they have 0g trans fats per serving, contain no partially hydrogenated oils, have no cholesterol, have 75% less fat than butter per serving, have 30% less calories than butter per serving and taste great! And to prove the awesome taste of the spreads, I put the spreads up to the challenge, the cookie challenge that is!

Best Ever Peanut Butter Oatmeal Cookie Recipe
Ingredients
2 cups quick-cooking oats
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup Country Crock spread
1 cup Skippy crunchy peanut butter
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp vanilla extract
1 package (12 oz) semi-sweet chocolate chips
Directions
1. Preheat oven to 350 degrees.
2. Combined all ingredients but the chocolate chips, flour and oats. Blend until smooth.
3. Add in Oats and mix thoroughly, begin to add in flour 1/2 cup at a time. Blend until smooth.
4. Add chocolate chip and mix until chips are spread evenly throughout mixture.
5. Chill mixture for 30 minutes.
6. Drop teaspoonfuls on greased baking sheet and bake for ~13 minutes.
These cookies were AMAZING! Seriously, I was surprised at how soft and moist they were! And the flavor, well lets just say that I will be making another batch of them this weekend because they are gone and my husband is requesting seconds. I am thinking we will even leave out a few for Santa, that is, if they make it until Christmas!
