Healthy and Easy Chicken Fried Rice Recipe with Minute Rice #LoveEveryMinute

Chicken Fried Rice

Ingredients
Non-stick cooking spray
4 egg whites
12 oz chicken breast (cubed)
1 1/2 cup frozen mixed carrots and green peas
2 cups cooked rice
4 TBS low sodium soy sauce


Directions
1. Coat pan with nonstick spray, scramble egg whites over medium heat for 3 minutes and set aside.

2.  Recoat with the pan non-stick spray and brown chicken pieces.  While chicken is browning, prepare the rice according to the directions written on the box.

3.  Add the frozen vegetables and continue to cook for 5 minutes.

4.  Stir in rice and soy sauce.  Mix together thoroughly.

5.  Add in the cooked egg whites.  Mix and serve hot!
