Crockpot Thai Chicken Recipe with Success Rice: Cooking Made Easy #SuccessRice

Lately I've been on an Asian food kick, so when I ran across this recipe on a a forum recently I was super stoked!  I was first drawn to it for the Asian flavor but when I noticed that it also involved using a Crockpot I KNEW I had to give it a try!  I am sure glad I did because it is one of the best Asian meals that I have ever cooked.  Give it a try, you won't be disappointed!

Crockpot Thai Chicken Recipe

Ingredients
8 boneless skinless chicken breasts
1 (16 ounce) jar cilantro salsa (or any other flavor you prefer)
1/2 cup crunchy peanut buter
2 tsp ginger
4 Tbs light soy sauce
2 tsp lime juice
1 can light coconut milk
1 bag frozen sliced red, green and yellow peppers
1/2 cup chopped onion
1 Tbs chili powder
1 tsp Sirachi red sauce

Directions
1.  Put all ingredients in a Crockpot and cook on low for 6-8 hours.

2.  A half an hour before servings, shred and mix chicken thoroughly.

3.  Serve on a bed of rice.
