Easy Crockpot Chicken Fajita meat & Fajita Seasoning Mix Recipe

 

My family (myself included) are huge Mexican food fans!  I usually make some sort of Mexican dish once a week.  Chicken fajitas are my favorite but truthfully, I totally disliked cutting up the raw chicken to make it.  I will never make chicken fajitas any other way, ever again!  This crockpot recipe has saved my life, not only is it awesomely delicious but for the working mom like myself, it is SUPER easy!!
 
Easy Crockpot Chicken Fajitas

Ingredients
4 boneless skinless chicken breasts
1/2 can chicken broth
1 16oz jar salsa
1 4oz can diced green chiles
1 medium onion, diced
1 bell pepper sliced thin
2 cloves garlic crushed
Sriracha to taste
 2 packets of fajita seasoning (substitute found below)
 
 
Directions
 1.  Add all ingredients to crockpots and cook on low for 6-8 hours.
 
2.  Around the 4-5 hour, shredded the chicken with two forks.  Mix and continue to cook.
 
 
Now I know some of you out there are not big on the packets of seasonings you find in the grocery store.  I can understand because some of those are filled with MSGs.  Well here is a nice substitute:
 
Fajita Seasoning
1 TBS corn starch
2 tsp chili powder
1 tsp salt
1 tsp paprika
1 tsp sugar
1/2 tsp onion powder
1/4 garlic powder
1/4 tsp cayenne
1/4 red pepper
1/4 tsp cumin

The seasoning mix is comparable to 1 packet of mix. And 1/2 can of the smaller 8 ox cans! :)

How much is 1/2 can of chicken broth? I make my own so am wondering if you consider a whole can to be 64 oz or are you talking an 8 oz can? Also, the fajita seasoning substitute - is that for one pack or two packs? I doubled your recipe but again I am confused about whether that's right. Thanks for clarifying.
