Easy Eggs in a Basket Recipe with Roman Meal: Roman Meal "Baked Fresh" Sweepstakes

When life hands me eggs and bread, I make "Eggs in a Basket"!  It is that time of year again, when all of us parents out there will be overloaded with Easter eggs.  What to do with this plethora of eggs?  Break out all of your "eggy" recipes of course and one of my favorites is this Skinny Deviled Eggs recipe.  Another top 5 favorite of mine is "Eggs in a Basket", or as some of you out there call it "Toad in the Hole".  Not only is Eggs in a Basket an easy and delicious morning meal but it is also ranks pretty good on the nutritional scale, especially when you are using Roman Meal bread.

Roman Meal's Whole Grain bread is a great source of fiber, vitamin D and calcium.  A diet rich in whole grain has been shown to reduce the risk of heart disease, type 2 diabetes, obesity and also aids in digestion!  A whole grain diet can improve bowel health and promote the growth of healthy bacteria in the colon.  But despite these health benefits, the average American eats less than 1 serving of whole grains per day.  Let me assure you, you can fill your whole grain quota with this Eggs in a Basket recipe because you won't want to stop eating them!  You can also find many more awesome bread recipes on Roman Meal's website.

Eggs in a Basket

Ingredients
Bread
Egg
Butter

Directions
1. Cut out the center of the bread using a glass cup or cookie cutter.

2.  Butter one side of the bread (and the cut out portion) and begin to melt butter in pan.

3.  When butter is melted, place unbuttered side of bread (and cut out) down on pan.  Crack egg into the "hole" of the bread.  Cook until bread is toasty brown.  Easy way to check the "toasty brown" consistency is to check your cut out piece.

4.  Flip the bread, egg and cut out piece.  Cook until the other side of the bread is toasty brown.

  1. I wasn't able to subscribe to Roman Meal using your link (because the page wouldn't load). I tried to go to the Roman Meal web site to sign-up, but got an error message there, too. It wouldn't surprise me if I'm already a subscriber, but I thought it was better to err on the side of caution, so I didn't claim that entry.
