Beef, It's What's For Dinner: Philly Cheesesteak Stuffed Peppers Recipe with Slow Cooked Roast Beef

I have a house FULL of meat loving eaters!  True story, my 9 year old's response when asked what he wants for dinner, "You know me Mom, I am a Carnivore!"  Yes we certainly love meat in our home and the choice of meat most preferred is BEEF.  It is totally what's for dinner!

Beef dishes are a top choice in my home because it is very easy to prepare and it's a great source of protein.  Actually, did you know that beef contains 10 essential nutrients to help keep you energized?  I knew it had health benefits but I had no ideas it had that many!

So as you can imagine, my dinner recipe box contains many beef recipes.  However, I am always on the look out for more and BeefItsWhatsForDinner.com has a great selection to choose from.  One of my favorite beef dishes is Roast Beef, I make a very easy version in the Crockpot.  My kids love it on rolls but I prefer to use it in my Philly Cheese Steak Stuffed Peppers recipe.


Philly Cheese Steak Stuffed Peppers Recipe
Ingredients
Roast Beef (see recipe below)
Provolone Cheese
Bell Peppers

Directions
1.  Preheat oven to 400 degrees.

2.  Slice the tops of the bell peppers and hollow out.



3.  Line inside of bell pepper with provolone cheese.

4.  Stuff the bell pepper with the cooked roast beef mixture until almost overflowing.


5.  Cook peppers in oven for 15 minutes and then add cheese to top of pepper.

6.  Allow to cook for an additional 15 minutes or until cheese has melted and lightly browned.

Slow Cooked Roast Beef

Have a 3 pound bottom round roast cut into thin slices at your local meat market.  Layer the meat slices in a crock pot with one chopped onion and minced garlic.  Add 1 tsp ground pepper, 1 tsp dried oregano, 1 tsp dried basil, 1 tsp parsley, 1/2 tsp crushed red pepper, 3 beef bouillon cube to 2 cups of water.  Pour water over the beef and cook in crockpot on low for 4-5 hours.
