With a juicy chicken breast filled with a slice of ham and Swiss cheese slices, all rolled up and topped with bread crumbs and parmesan cheese. Heathy Chicken Cordon Bleu Recipe
Ingredients
4 boneless skinless chicken breasts
4 wedges Laughing Cow cheese (I used garlic and herb flavored)
8 deli ham slices
dijon mustard
black pepper
garlic powder
Directions
Preheat the oven to 350° degrees F. I had 4 chicken cutlets, so this recipe made 4 servings for me. Cover the top of each breast with sheets of plastic wrap, and using a meat mallet, lightly pound the chicken so it’s about a quarter inch thick. Lay the thin cutlets flat and season with salt, pepper, and garlic powder. Then spread the Laughing Cow cheese wedge and creamy Dijon sauce over the top of the chicken breast. Add the slices of salty ham and roll them up as best you can. Place a couple toothpicks to keep them in place.
Place the chicken rolls on a baking sheet that has been sprayed with nonstick spray. Cover with foil, and bake for 30 minutes. Remove the foil and bake another 10-15 minutes, or until the top of the chicken is golden brown. It should be done when the internal temperature is 165° when using a meat thermometer.
