Cheesecake Stuffed Strawberries Recipe (Low Calorie & Keto)
Ingredient
12-18 large juicy strawberries (amounts vary on size)
12 oz plain Greek Yogurt
1 cup skim milk
1 box sugarfree Instant Pudding Mix (cheesecake flavor)
1 tsp Vanilla Extract
12-18 blueberries (optional for top of the strawberry)
Directions
Using a small paring knife (sharp knife), melon baller, or strawberry huller, cut a small hole into the tops of the fresh berries. Make sure to use fresh and ripe strawberries to get the sweetest flavor. Cut the top of the strawberries and remove the center, making a hole for the cheesecake mixture. In a mixing bowl, combine the pudding mix, Greek yogurt, milk, and vanila extract and blend using a hand mixer until you have a firm cheesecake filling set. Using a small spoon (or even a plastic bag or a pastry bag), fill the centers of the strawberries with the cream cheese mixture. Fill the cheesecake-stuffed strawberries with the creamy cheesecake filling, finishing off with a star tip on your piping bag to make it look fancy! Top the simple stuffed strawberries with a fresh blueberry for the 4th (or even graham cracker crumbs, mini chocolate chips, cookie crumbs, melted chocolate, chocolate drizzle, or even orange zest). Allow the sweet cream cheese filling to set in the strawberry for about 15-20 minutes in the refrigerator before serving.
