The new year is here, and for many, it means getting back to a healthy lifestyle and eating less calories. I am always on the lookout for a healthy recipe, particularly if it involves one of my favorite dishes. I love a traditional Alfredo sauce, but I do not like the calories that come with it. Therefore, I use this low carb and healthier chicken Alfredo recipe that’s a fraction of the calories. It truly is a great recipe that the whole family adores. Healthy Chicken Alfredo Recipe: Laughing Cow Alfredo Sauce

Healthy Chicken Alfredo Recipe

Ingredients

1 lb of boneless, skinless chicken breast

1 cup broccoli (chopped)

1 red pepper (chopped)

1 cup low fat cottage cheese (can substitute with greek yogurt)

4 wedges Laughing Cow Cheese

2/3 cup fat free milk (can substitute with almond milk, skim milk, chicken broth, or chicken stock)

2 Tbs Parmesan cheese

1 box whole wheat pasta (fettuccine noodles)

1 TBS olive oil

garlic powder (optional: to taste)

black pepper (optional: to taste)

onion powder (optional: to taste)

italian seasoning (optional: to taste)

fresh parsley (optional: to taste)

Directions

Dice the chicken breasts, then place them in a small bowl, drizzle with olive oil, and season with garlic powder, onion powder, Italian seasoning, and black pepper. Add in pepper and broccoli. Spray with nonstick cooking spray and heat a large skillet over medium-high heat, then cook the chicken for 3-5 minutes or until golden brown and cooked through. Remove it and set it aside. Bring a large pot of water to a boil, and cook the pasta of your choice until al dente. Reserve a cup of the pasta water, and then drain the pasta.

Over medium heat, combine the cottage cheese, laughing cow cheese, Parmesan cheese, and milk, making a heavy cream homemade Alfredo sauce. Cover and let it simmer on low heat for ~5 minutes until the laughing cow cheese has melted into a creamy sauce. Remember to stir occasionally to not let the mixture bowl over or burn at the bottom of the pan. Once the cheesy sauce is complete, add in the cooked pasta and a few tablespoons of the fettuccine pasta cooking water into the creamy Alfredo sauce. Add the cooked chicken to the creamy pasta, toss, and serve sprinkled with chopped fresh parsley or chives, red pepper flakes, and extra Parmesan cheese. Store the leftover chicken fettuccine Alfredo in an airtight container.
