“Skinny” Baked Donuts: Strawberry Shortcake Recipe


I am a fan of donuts, especially the healthy baked doughnut variety!  You may even remember a couple previous recipes I posted: Baked Chocolate Donuts and Baked Banana Donuts.  Well, what better way to incorporate those delicious summer strawberries than with a strawberry shortcake doughnut?  The recipe is so good, you won’t believe they are low in calories!  But that is my job after all, to make the foods I love that do not love my waist line.  Happy Guilt Free Eating!
Baked Strawberry Shortcake Donuts
2 1/2 cups Oats
1 cup Greek Yogurt (plain)
2 eggs
3/4 cup sweetener (use enough to equal 3/4 cup of sugar)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp lemon juice
~1 cup fresh strawberries
1.  Pre-heat oven to 375 degrees and spray donuts pan with non stick spray.
2.  Blend all ingredients (except strawberries) and fill each cup about 3/4 full with the batter.
3.  Wash and cup up the strawberries.  Place the strawberries on top of each doughnut.
4.  Bake for 10 minutes.  Stick a toothpick into each doughnut to ensure they are completely cooked.
