Larabar Pecan Pie Recipe: Healthy Pecan Pie Balls

Remember that time I did a Larabar review?  Larabars are one of my favorite healthy snacks and my flavor of choice is the Pecan Pie variety.  The only problem is, that particular variety is SO difficult to find.  I really have searched near and far, high and low to no avail.  So, I decided to take matters into my own hands and recreate this delicious treat.

The best part about this recipe, other than how closely the taste resembles a real pecan pie, is how easy it is to prepare.  With only TWO ingredients, it can not get any simpler!  This truly is the perfect on-the-go healthy treat!

Healthy Pecan Pie Balls
Ingredients
 1 cup pecans
1 cup pitted dates
Directions
 1. Chop pecans in a blender (I used my Ninja system) until all pieces are chopped finely.  Set aside in bowl
2. Chop dates in blender until it is a “mush” consistency.  Add to bowl with pecans and mix together.
 3.  Form into balls and enjoy!

I make all kinds of date balls, with chia, pumpkin seeds, sesame seeds...pretty much anything protein/fiber I have on hand. I even add some vegan protein powder and oat bran on occasion. These are so simple and I love the idea that they taste like pecan pie. They'll be the next I make. Oh, and I always zap my dates in the microwave for a few seconds to soften them a bit - it makes the blender work a little less difficult.
