
I am a BIG football fan! Ever since I was a little girl, I remember celebrating the Big Game with family and friends. It certainly was a celebration filled with eating, laughing, cheering (or sometimes booing) and more eating! This year, since I am trying to promote “healthier eating” to those around me, I decided to do it up healthy style! Now the only question was, what to serve? Well, I definitely wanted to make a dish that I did not have to “tend” to during the game. So, I decided to go with a Crock-Pot dish, Skinny Lasagna Soup!
In preparation, I headed to our local Walmart to pick up all the necessities for the game. When scanning aisles for my soup ingredients, I noticed Classico now offers canned tomatoes. I was stoked! The taste factor in this dish relies heavily on the canned tomatoes and I am already a fan of Classico‘s jarred spaghetti sauces, so I figured this would be a perfect addition to my soup. After reading over the label, I also learned Classico’s canned tomatoes are 100% all-natural and contains no preservatives! I had no doubt Classico tomatoes would not only aid me in making my Lasagna Soup delicious but also a healthy success!
The morning of the “Big Game” I began preparing my soup.
Crock-Pot Skinny Lasagna Soup

Ingredients
1 lb Italian Turkey Sausage (remove casings)
1 onion (chopped)
1 bell pepper (chopped)
3 cloves garlic (minced)
~32 ounce chicken broth (add more for soupier consistency)
3 Tbs Parmesan cheese
2 Tbs Spaghetti seasonings (a combination of basil, oregano and crushed red pepper)
1 can (28 oz) Classico crushed tomatoes
2 cups whole wheat pasta
Directions
1. Remove casings from the sausage and brown with the chopped green pepper and onions.
2. Add all ingredients to the Crock-Pot (except pasta) and cook for 6 hours on low or 3 hours on high.
3. Thirty minutes before you are ready to serve the soup, add pasta. I suggest adding 2 cups of dry pasta but if you like a more “noodley” consistency (like my husband) you may add 2 1/2 – 3 cups.
4. Serve in bowl when ready! Top with mozzarella cheese and enjoy this delicious, healthy meal!!

And enjoyed they did, that Crock-Pot was pretty much “licked” clean by the end of the night! I have to admit, it was a great evening, with perfect company, an interesting game and delicious food! Can it get any better than that?

Although the crowd was split on who they wanted to win the Big Game, there was one thing that everyone agreed on.

What measurements do you use exactly for spaghetti seasoning. I have made this a few times. Occasio ally with too much red pepper.
