Chicken is a huge staple to my diet. I would guess I have it for dinner at least 3 or 4 times a week and with serving it so often, I really try to get “creative” with my dishes! If you look through my recipes you will definitely see many chicken dishes: Skinny Chicken Pot Pie, Healthy Chicken Fried Rice, Chicken Cordon Bleu and even Skinny Chicken Alfredo!
See, I told you I love my chicken dishes!! And sometimes I want just a baked chicken breast but one can grow tired of a plain ole baked chicken breast over and over again. This is why I am LOVING this new recipe, let me introduce you to:
Greek Yogurt Chicken Recipe
Ingredients
4 boneless/skinless chicken breast
1cup Greek yogurt (plain)
1/2 cup Mozzarella cheese
1 tsp Garlic
1/2 tsp Cajun Seasoning
1/2 tsp pepper
1cup Greek yogurt (plain)
1/2 cup Mozzarella cheese
1 tsp Garlic
1/2 tsp Cajun Seasoning
1/2 tsp pepper
Directions
1. Preheat oven to 400 degrees.
2. Mix yogurt, cheese and seasonings together in a small mixing bowl.
3. Place chicken in a casserole dish and coat the breasts thickly with the mixture.
4. Cook chicken around 20-30 minutes or until done. Make sure to check with meat thermometer to insure chicken is cooked completely.
