Weight Watchers is an easy and terrific program, but it becomes tricky when special occasions arise and the search for an easy recipe and perfect treat that isn’t too many Weight Watchers points and low on calories. I’ve found the perfect dessert with this pineapple orange Sunshine Cake, which is made with simple ingredients and is a perfect cake for the program. For those long-time members, this cake has been called Celebration Cake or Crushed Pineapple Cake in the past. Weight Watchers Sunshine Cake Recipe – Celebration Cake Recipe
Ingredients
1 box yellow cake mix (or other flavors of boxed cake mix such as white cake mix)
1 small can of sweet mandarin oranges (undrained)
1 egg whites
1/3 cup apple sauce (replaces vegetable oil)
8 oz fat free Cool Whip
1 can crushed pineapple (include pineapple juice from can)
1 small box sugar-free Jello Pudding dry pudding mix – vanilla pudding mix
Directions
Pre-heat the oven to 350° F. Spray a 9 x 13 prepared baking pan with non-stick cooking spray and set aside. In a large bowl, combine the yellow box cake mix, ⅓ cup of applesauce, egg whites, and oranges with juice from the can using an electric mixer. When the cake batter is combined, pour the cake ingredients into the tube pan and bake for 30-35 minutes (or use the cake tester method with a wooden pick inserted in the center of the cake that comes out clean). Set the cake aside on a wire rack to cool to room temperature.
Make a pineapple flavor filling by combining the box mix of vanilla instant pudding mix with the container of Cool Whip whipped topping and crushed pineapples and juice. Whisk to combine it all together. Pour pineapple mixture over the top of the cake and spread it to all sides of the cake using a rubber spatula. Refrigerate for 4 hours and garnish with maraschino cherries. Cover with plastic wrap, saran wrap, aluminum foil, or store in an airtight container.

If you have a Publix in your area, they sell sugar free cake mixes. We use this when making this delicious cake and the points are, I believe 2. I'll double check that, but it's very low points using the SF cake mix.

you can make the cake mix by mixing the cake mix with a diet cola, sprite, seven up. it is only 2 points a slice plain
