Weight Watchers Celebration Cake Recipe

I am a four time Weight Watcher member and one of my favorite recipes is this Weight Watchers Celebration Cake.  Meaning, I have been on and off the Weight Watchers program four times.  Now I do not want to bad mouth Weight Watchers, I think it is a great program!  The community support, the point system and of course the “Bravo” stickers is just a little part of what makes Weight Watchers rock.  The only problem is having the expendable cash to stay on the program.  Especially when I know what I SHOULD be eating, it is just a matter of doing what I should be doing!

However being on the Weight Watchers program did give me the opportunity to pick up some awesome recipes.  One of those recipes is my Skinny Chicken Fried Rice, this is a regular staple dish in my home.  Another winner is this Celebration Cake.  It is so light, refreshing and a perfect summer time dessert!!  Now I am not sure how many Weight Watchers points this cake is since the program has changed so much, it use to be just 1 point a serving.  But if you figure it out on your own, please let me know and I will update the page!

Weight Watchers Celebration Cake

 Ingredients
1 box yellow cake mix
1 small can of mandarin oranges (undrained)
1 egg whites
1/3 cup apple sauce
8 oz Fat Fat Cool Whip
1 can crushed pineapple (undrained)
1 small box sugar-free Jello Pudding

 

Directions
1.  Mix together the cake mix, oranges (with juice, egg whites and apple sauce.  Pour in a 9 x 13 pan.
 
2.  Cook for 30 minutes at 350 degrees.  Remove cake and let cool.
 
3.  Mix together the cook whip, pineapple (with juice) and pudding mix.  Frost cooled cake with this mixture.
 
4.  Keep refrigerated until ready to serve.  Cut into 12 pieces and Enjoy!!!

If you have a Publix in your area, they sell sugar free cake mixes. We use this when making this delicious cake and the points are, I believe 2. I'll double check that, but it's very low points using the SF cake mix.

If you make this with regular cake mix it is 11 SmartPoints per serving.

you can make the cake mix by mixing the cake mix with a diet cola, sprite, seven up. it is only 2 points a slice plain
