Skinnier Double Chocolate Zucchini Bread Recipe: Make A Smart Choice with Smart Balance Spreadables

 I do not have a garden but many of my family members do and they are kind enough to share some of their produce from time to time (Or when I bug them!).  For some reason this year, zucchinis ran rapid in such gardens and I was given a plethora of them for my kitchen concoctions.  In the past I have made some snacks with my Zucchini meal endeavors, such as my Jalapeno Zucchini Chips but this time I wanted to sweeten things up a bit!  So, I decided to make not only Zucchini bread but a Double Chocolate Zucchini bread and of course I had to “skinny” it up a bit.

“Skinnier” Double Chocolate Zucchini Bread

Ingredients
1 egg & 2 egg whites
1/2 cup honey
1/4 cup applesauce
1/4 cup coconut oil
1/4 cup brown sugar
1/2 Tablespoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/3 cup Cocoa powder
1 2/3 cup whole wheat flour
2 cups grated zucchini
1 cup dark chocolate chipsDirections
1. Preheat oven to 350 degrees and spray bread pan with non stick spray.2.  Beat eggs, honey, coconut oil, applesauce, brown sugar and vanilla extract in a large bowl.

3. Add baking soda, baking powder, cinnamon, cocoa powder and whole wheat flour and mix thoroughly.

4. Fold in grated zucchini and chocolate chips and pour into bread pan.

5. Bake for 60 minutes or until the center is fully cooked.  Check by sticking center with a toothpick and making sure it comes out batter free.

The bread looks delicous! We exclusively use Smart Balance and I think I have all ingredients on hand. Can't wait to try it!
