1 egg & 2 egg whites
1/2 cup honey
1/4 cup applesauce
1/4 cup coconut oil
1/4 cup brown sugar
1/2 Tablespoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/3 cup Cocoa powder
1 2/3 cup whole wheat flour
2 cups grated zucchini
1 cup dark chocolate chipsDirections
1. Preheat oven to 350 degrees and spray bread pan with non stick spray.2. Beat eggs, honey, coconut oil, applesauce, brown sugar and vanilla extract in a large bowl.
3. Add baking soda, baking powder, cinnamon, cocoa powder and whole wheat flour and mix thoroughly.
4. Fold in grated zucchini and chocolate chips and pour into bread pan.
5. Bake for 60 minutes or until the center is fully cooked. Check by sticking center with a toothpick and making sure it comes out batter free.
