A Summer Menu Inspired by The Hundred Foot Journey: Skinny Strawberry Pie Recipe

My kitchen is my “Happy Place.”  Seriously, I absolutely love to cook and can spend hours in the kitchen transforming some of my favorite recipes into “skinnier” versions.  As much as I love to cook, I equally enjoy watching movies and this is why I am super stoked about the upcoming release of The Hundred Foot Journey on August 8th.
 
In DreamWorks Pictures’ “The Hundred-Foot Journey,” the opening of a new Indian restaurant in the south of France next to a famous Michelin-starred eatery is nearly cause for a heated battle between the two establishments, until Le Saule Pleureur’s icy proprietress, Madame Mallory, recognizes her rival’s undeniable brilliance for preparing masterful meals.
 
This summer, The Hundred Foot Journey has inspired foodies like myself to get into the kitchen and create their own masterpieces!  Such as my take on an Au Gratin recipe, Skinny Turnips Au Gratin and Garlic & Cheese Cauliflower Biscuits.  And more recently, The Hundred Foot Journey along with Le Cordon Bleu are sharing some great summer recipes to get you all fired up for the movies release!  Of course, I wanted to add to the awesome menu with my skinny version of this Strawberry Pie recipe.  Enjoy these delicious dishes!

Skinny Strawberry Pie
 
Ingredients
1 graham cracker crust
1 box sugar-free vanilla instant pudding
1 cup skim milk
1 container lite cool whip
1 box sugar-free strawberry jello
1 cup boiling water
1/2 cup cold water
1 1/2 cup sliced strawberries
 
Directions
1.  With hand mixer, mix instant pudding, milk and cool whip.  Spread into the graham cracker crust and place in refrigerator to firm.
 
2.  Boil water.  Add boiling with into a bowl with jello.  Mix until all the jello powder is dissolved.  Add cold water and sliced strawberries.  Place in refrigerator until the jello mixture stiffens into an egg white consistency.
 
3.  Stir the jello/strawberry mixture and spread over the top of the pudding in graham cracker crust.  Enjoy!
I do like to begin every meal with dessert first but we can not have a well rounded summer menu without the “main” course.  If you are a fan of Indian food, you are sure to give this curry hot dog recipe a try.
