Fall is here, it is my favorite season of the year! I love the trees changing colors, the crispness in the air and baking. I especially love September/October because it is apple season, my favorite fruit, and most of my recipes include apples in them. So in honor of my favorite season and favorite fruit, I put together this awesome Foodie roundup of 30 Fall Apple Recipes.
To go along with this amazing apple recipe roundup, I figured I would include a delicious, easy and skinny recipe to share with you all today. That is my three main goals when it comes to creating a dish; easy, skinny and delicious! I am a full time working mom, I do not have the hours in the day to spend in the kitchen creating 20 ingredient dishes. So, my recipes need to be quick and easy! The Apple Spice Cake I made the other day, certainly combines all three requirements. It is super easy to prepare, delicious and I “skinnied” it all up! Hope you enjoy the recipe, my taste buds sure did!
Skinny Apple Spice Cake Recipe
Ingredients
1 Duncan Hines spice cake mix
3 eggs
3/4 c. water
1/4 c. apple sauce
1/8 tsp. cinnamon
1/8 tsp. nutmeg
3 c peeled chopped apples
1 c pecans or walnuts (optional)

Directions
1. Preheat oven to 350 degrees and spray a 13×9 baking dish with nonstick cooking spray.
2. Combined all ingredients but the chopped apples and nuts. Mix well with a hand mixer for 2 minutes.
3. Fold in apples and nuts. Pour into the baking dish, evenly.
4. Bake for 45 minutes or until a toothpick comes out clean when poked.
