It’s that time of year, the holiday season, and in this household, it means sweet treats, bake desserts, and homemade fudge. Although no one enjoys all the added sugar in the perfect treat, I have been on the lookout for a low carb with healthy fats and simple ingredients. I am a fan of chocolatey fudge, particularly chocolate peppermint fudge; it truly is the best thing, so it was on my radar, and I happened to come upon this super easy fudge recipe. Healthy Peppermint Fudge Recipe

Ingredients

4 oz Unsweetened Dark Chocolate Bakers Squares

4 oz SemiSweet Bakers Fudge Squares

1 TBS Unsweetened Cocoa Powder

3/4 cup Sugar Substitute or Liquid Sweetener

1 cup Plain Greek Yogurt

1/8 tsp Sea Salt

1/8 tsp Pure Peppermint Extract

1/8 tsp Vanilla Extract

Toppings: Andes Crushed Peppermints or Crushed Candy Cane

Directions

Melt chocolate squares for 2 minutes (or until melted) in the microwave in a safe bowl on medium heat. Once melted, add the remaining ingredients to the chocolate and mix well. Line a loaf pan or square prepared pan with parchment paper and pour the fudge mixture into it. Using a cutting board, crush the candy canes and add the chopped candy to the top of the fudge for that peppermint flavor. Push down (a little bit not a whole lot, jut enough to make the candy stick) into the fudge a bit. Allow fudge to come to room temperature or cool in the freezer for 30–60 minutes or in the refrigerator for 2–3 hours before cutting into small squares. Store it in an airtight container.
