Spicy Nuggets with Sweet ‘n Spicy Dipping Sauce Recipe

I have always had a vivid imagination. Whenever I read a book, I immediately became whoever I was reading about. When I read The Secret Garden – one of my favorites- I became Mary Lennox and tried to wall off part of my back yard with boxes, trash bins, and miscellaneous items from the garage. I once asked my mom if I could use her curtains to make a party dress, ala Scarlet O’Hara. She gave me a look which was a cross between did you forget to take your medication and aliens have inhabited my child! I was Storm, Wilma Flintstone, Cat-Woman, and She-Ra. But my all-time favorite was Super Girl! I loved her costume, her powers, and the fact that she had a weakness – kryptonite!

 

As an adult, I am not so animated, but I still have my ways of identifying with my favorite characters. For example, ask me a request and I can revert to Carmen Santiago in a flash. Find me! Now, it is the beginning of the New Year and I have made, like everyone else, resolutions. One of which is to not eat as much refined sugar. But alas, sugar is my kryptonite! Show me a sweet treat and I rival Scooby-Doo. I become weak and lose my strength. I am Super Girl reduced to a helpless blob! So my resolution seemed like an enormous mountain to climb, or more accurately a desert (dessert?) planet to cross. I had to find a method to satisfy my inordinate taste buds without using much of the “S” word. Then I found marvel of marvels a sweetener product that made me dance like all 3 Josie and the Pussy Cats! Truvia Spoonable!

Just one packet of Truvia Natural Sweetener delivers the same sweetener power as two teaspoons of sugar! Be gone Kryptonite! I was on my way! Super-girl sans the kryptonite! I could conquer the enemy! Truvia Natural sweetener is not going to help me win the lottery, or become Cat Woman, but it just may help me fit into a cat suit one day. I can’t help but to tell everyone to try this product. It is all I use to replace refined sugar. Wholesome goodness that is sooo easy to use is my way to describe it. Now I have to channel Julia Child and go into the kitchen and make some Spicy Chicken Nuggets with a Sweet and Spicy Sauce. Oh! Of course, I will use Truvia Spoonable!!!

 

 

Spicy Nuggets with Sweet ‘n Spicy Dipping Sauce Recipe
 
Spicy Nugget Ingredients
1 lb chicken breast tenderloins
1 1/2 cup oats (uncooked)
1/2 TBS chili powder
1/2 TBS salt
1/2 TBS garlic powder
1-2 TBS Cajun spice
1/2 TBS paprika
1/2 TBS oregano
1 tsp Truvia Spoonable
 
 
Sweet ‘n Spicy Dipping Sauce Ingredients
1/2 cup plain Greek Yogurt
1/4 cup low sugar ketchup
1/2 tsp garlic powder
1/4 tsp paprika
1-2 TBS Cajun spice
1 tsp Truvia Spoonable


Directions
Preheat oven to 425 degrees.  Add oatmeal to blender/food processor and process until a flour consistency.  Add all spices to the oatmeal flour.

 
Chop chicken into nugget-like pieces.  Roll chicken pieces into the spice mixture until covered.

 

 

Line baking sheet with foil and spray with non-stick cooking spray.  Spread coated chicken pieces onto the sheet and bake for ~10 minutes or until a golden color.

 

To make dipping sauce: Blend all ingredients for the dipping sauce thoroughly.

 

 

Chill dipping sauce until ready to serve.  Happy Eating!

Loving this idea! Never thought to use Truvia with chicken! This is gonna be on our to-make list for sure!

Those look great! I love making my own chicken nuggets, and a dipping sauce is ALWAYS a win. Yum! #client
