Crust-less Mini Quiche Recipe: Cooking Made Easy With Braun PureMix Jug Blender & MultiQuick 7 Hand Blender

 
They say that breakfast is the meal of champions and I have to agree, it’s by far my favorite meal. I could have breakfast for breakfast, lunch & dinner and I sometimes do! I’m not the only one in my household with the same sentiments for breakfast foods. Whenever I ask the kids what they want for dinner, they always reply “Breakfast for dinner!” However, we sometimes run into difficulties when it comes to breakfast foods. Like most kids, my 9 and 11-year-old can be picky eaters. When I make a meal, they dissect it like they are in Science class and pick out anything that looks suspicious. By suspicious, I mean it cannot contain any particle of vegetables or what they like to call “green stuff.”

 

So when I am making a classic breakfast food dish, such as eggs, I leave out some of my favorites “mix-in’s” like spinach and peppers to accompany the eggs. Sure, scrambled eggs and cheese can still taste great without vegetables but some dishes, like a delicious spinach quiche, just isn’t the same without “green stuff” in it. Therefore, I have to get a little creative when cooking for the entire family. This is the very reason I started making these crust-less mini-quiches. Each mini-quiche can be catered to an individual’s particular tastes. For my husband and I, we opt for the spinach, bacon, cheese and sweet pepper mini quiches. For the kids, they prefer bacon and cheese quiches. With a little creativeness and ingenuity; we can make the entire family happy!  Check out my recipe:

 

 
Crust-less Mini Quiche Recipe

 

 
Ingredients
6 Eggs
1/2 cup Milk
 
Mix-Ins
Shredded Cheese
Spinach
Bacon (crumbled)
Peppers
 
Directions

 

 
Preheat oven to 350 degrees and spray a muffin pan with non-stick cooking spray.

Once the eggs are thoroughly beaten, split the mixture evenly in 12 muffin cups.  Fill each cup with the appropriate mix-in’s you prefer and place in oven.
 

 

Cook mini-quiches 10 minutes, turn pan 180 degree and cook an additional 10 minutes.  Serve these delicious crust-less mini quiches the entire family can enjoy!
