I am naturally a Summer person. This can probably be traced to my childhood in the sub-tropical New Orleans. When I cook them my entire kitchen smells like BBQ! The aroma is enchanting. I think if I opened my doors the neighborhood dogs would come running. Probably, the neighbors as well.

Because the chicken comes marinated and fully cooked, preparation is super quick and easy. It could not be more simple nor more ideal for busy meal providers. For me, it is near perfection! Bourbon Chicken Potato Skins Recipe
Ingredients
6 Russet Potatoes
Cooked Perfect Premium Fire Grilled Bourbon BBQ Thighs
4 slices of cooked bacon
1 TBS BBQ sauce
Shredded Cheese
Toppings: Sour Cream & Chives
Directions
Stick potatoes with a fork on all sides. Microwave on high 5-10 minutes. Once potatoes have cooled, cut horizontally and scoop out each potato leaving a 1/4 inch wall.
Heat the Fire Grilled Bourbon BBQ Bone-in Thighs according to directions on the package. Once removed, begin pulling chicken off of bone. Add chicken to bowl with crumbled bacon and BBQ sauce. Shred and mix well.
Fill each potato skin with chicken mixture and top with shredded cheese. Bake for 10 minutes at 450 degrees. Remove from oven, add optional toppings and enjoy this easy and delicious dish!
