Bourbon BBQ Chicken Potato Skins Recipe

I am naturally a Summer person. This can probably be traced to my childhood in the sub-tropical New Orleans. Since I have spent most of my life in the Midwest, I am now attuned to all four seasons and their accompanying fun-time activities. Except for one activity’s food which I crave all the time; BBQ! I am like a hungry tiger searching out its prey when it comes to excellent BBQ. One whiff of its luscious aroma, or a slight taste of its rich goodness and I am transported to the balmy and delicious days of my childhood. My children have only visited my home town, but they have inherited the BBQ gene. If I say chicken, the kids respond “grilled”! My husband is also no amateur in being able to ingest copious quantities of this heavenly prepared food. As a family, we ingest more grilled food than foods prepared any other way.

Currently, the outside temperature is in the mid-thirties and the prospect of my standing outside and grilling is about as likely as me surveying Antarctica. My cravings, however, are not in-tune with this immutable fact. Although my body is not easily fooled, I recently discovered the next best thing to actually grilling. When I cook them my entire kitchen smells like BBQ! The aroma is enchanting. I think if I opened my doors the neighborhood dogs would come running. Probably, the neighbors as well.

Bourbon Chicken Potato Skins Recipe

Ingredients

6 Russet Potatoes

Cooked Perfect Premium Fire Grilled Bourbon BBQ Thighs

4 slices of cooked bacon

1 TBS BBQ sauce

Shredded Cheese

Toppings: Sour Cream & Chives

Directions

Stick potatoes with a fork on all sides. Microwave on high 5-10 minutes. Once potatoes have cooled, cut horizontally and scoop out each potato leaving a 1/4 inch wall.

Heat the Fire Grilled Bourbon BBQ Bone-in Thighs according to directions on the package. Once removed, begin pulling chicken off of bone.  Add chicken to bowl with crumbled bacon and BBQ sauce.  Shred and mix well.
