I am naturally a Summer person. This can probably be traced to my childhood in the sub-tropical New Orleans. My cravings, however, are not in-tune with this immutable fact. Although my body is not easily fooled, I recently discovered the next best thing to actually grilling. Bourbon Chicken Potato Skins Recipe
6 Russet Potatoes
4 slices of cooked bacon
1 TBS BBQ sauce
Toppings: Sour Cream & Chives
Stick potatoes with a fork on all sides. Microwave on high 5-10 minutes. Once potatoes have cooled, cut horizontally and scoop out each potato leaving a 1/4 inch wall.
Heat the Fire Grilled Bourbon BBQ Bone-in Thighs according to directions on the package. Once removed, begin pulling chicken off of bone. Add chicken to bowl with crumbled bacon and BBQ sauce. Shred and mix well.
Fill each potato skin with chicken mixture and top with shredded cheese. Bake for 10 minutes at 450 degrees. Remove from oven, add optional toppings and enjoy this easy and delicious dish!
