The Superbowl is right around the corner and although the celebrations this year may look a little differently due to the pandemic, one thing will remain the same and that is big game snacks! Who doesn’t love fried goodness and finger foods when watching the game? Except the only thing we don’t love is some of the calories it brings. I always try to reduce those extra calories by opting to use my air fryer over frying in grease. And while I am aware that potato skins aren’t fried in grease, I still wanted to try to find a recipe which helps reduce the calories. Air Fryer Potato Skins Recipe
Ingredients
4 Potatoes
1/2 cup shredded cheddar cheese
1/4 cup sour cream
4 strips cooked bacon (crumbled)
Directions
First, boil the potatoes about 15 minutes, depending on the size of the potato, so that it is cooked throughout. Remove and cool. Once the potato is cooled, cut in half and scoop out about 1/4th of the filling. Mix the filling with shredded cheese, 3 strips of bacon which you will want to crumble and 1/4 cup of shredded cheddar cheese. Fill back each potato with the filling and place in Air Fryer, as shown in the photo above.
Cook the filled potatoes in the air fryer about 10 minutes at 350 degrees or until the top looks brown. Open up air fryer and add shredded cheese and more bacon crumbles on top of each potato and cook at a higher temperature, around 400 degree for about 3-5 minutes or until the cheese is nicely melted. Top with sour cream and chives and enjoy!
