Waffle Recipe Without Milk
Ingredients
2 cups all purpose flour (substitutions: whole wheat flour, oat flour)
1 1/2 cups non-dairy milk (milk substitute: soy milk, coconut milk, oat milk, cashew milk, rice milk, unsweetened almond milk, other plant-based milk)
2 TBS apple cider vinegar (substitutions: lemon juice, white vinegar)
1/4 cup neutral oil (vegetable oil, canola oil, melted coconut oil, vegan butter, avocado oil, olive oil)
1 TBS sugar (substitutions: coconut sugar, brown sugar)
1/2 tsp vanilla extract
1 tsp baking powder
1/2 tsp salt
Favorite toppings: maple syrup, fresh fruit, fresh berries, peanut butter, chocolate chips
Directions
Preheat your waffle maker according to the instructions. In a medium mixing bowl, whisk together dairy-free milk and apple cider vinegar to make a vegan buttermilk substitute in place of milk. Let it sit for 5 minutes to rest. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Stir these dry ingredients until they are thoroughly mixed. Pour the vegan buttermilk mixture into a separate bowl and add the rest of the wet ingredients. Mix until they are well combined. Gradually pour the wet mixture into the large bowl of dry ingredients. Stir until the waffle batter is smooth and creates a fluffy texture.
Grease your preheated waffle iron with a small amount of oil or cooking spray. Scoop about 1 cup of batter into the middle of the waffle maker and close the lid. Cook waffles for about 3-5 minutes, or until golden brown and crispy. Repeat with the remaining batter. Store leftover waffles in the refrigerator in an airtight container.
