Weight Watchers Instant Pot Stuffed Peppers Recipe

  • Instant Pot


  • 4 each Bell Pepper
  • 15 oz diced tomatoes
  • 1/2 cup white rice (cooked)
  • 3/4 lb ground turkey
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp chili powder
  • 1 TBS parsley
  • 1 tsp pepper
  • 1/2 cup water
  • 1/4 cup shredded cheese optional


  • Slice top of peppers and gut the insides. Make filling by adding ground turkey, rice, diced tomatoes, onion powder, garlic powder, parsley, chili powder and pepper in a bowl and mix together well. Stuff peppers with the mixture.
    Add 1/2 cup of water to the bottom of your Instant Pot. Add Stuffed Peppers to the Instant Pot, making sure they stand upright. Cook peppers on High Pressure for 9 minutes. Fast release your Instant Pot once the 9 minutes has cycled, if peppers are not tender, cook on High Pressure for an additional 2 minutes. Optional: Add cheese on top of pepper once removed from the Instant Pot.
