Weight Watchers Blackstone Griddle Chicken with Mint Chimichurri Recipe
This easy and delicious Chicken with Mint Chimichurri recipes made on the Blackstone Griddle is delicious and Weight Watcher approved.
- 4 each chicken breast
- 1 cup mint leaves packed
- 2/3 cup parsley leaves packed
- 3 TBS white vinegar
- 1 TBS olive oil
- 2 medium garlic cloves
- 1/4 tsp salt
- 2/3 tsp crushed red pepper flakes
- 1 tsp Mrs. Dash garlic seasoning
- 1 tsp Kinders Italian Chop House Rub
Trim chicken breast and slice in half lengthwise. Season both sides of the chicken with the Mrs. Dash garlic seasoning and Kinder's Italian Chop House rub, you may add your own seasonings as you please. Cook on medium/low heat on lightly oiled griddle. I used a digital thermometer to check for "doneness" of the chicken, which was about 20 minutes total.While chicken breast are resting, put the rest of the ingredients into a food processors and pulse a few times until it is thoroughly chopped and mixed. Remove from food processor and add to the tops of the chicken breasts before serving.
