Crepes With An Easy Apple Filling Recipe

My favorite time of the year, Fall.  Not just because it’s hoodie and boot season, although that helps.  And not only because it kicks off the holiday season, beginning with one of my favorites, Halloween.  One of the main reasons I am a Fall fan is because of Apple Season!  You may have read, last month the family and I went apple picking at Eckert’s Farm.  We left with bags and bags full of apples, so of course that calls for apple recipes!  This apple filling for crepes and/or pancakes is SO easy and delicious!

This recipes is great for a filling in a crepe or a topping on a pancake or waffle.  The particular picture above is a Chia seed crepe I had for breakfast the other day.  And the best part?  It’s a light version, not heavy on the sugar and natural ingredients.  So here it is:

Easy Apple Filling Recipe

Ingredients

1 large or 2 small apples (peeled, cored and diced)

1 tsp apple pie spice

1 packet Truvia or sweetner of choice

1 TBS honey

Directions

Add all ingredients to a microwave safe bowl and stir, coating the apples completely with spice and honey.  Microwave for 3-4 minutes or until apples become soft.  Add to crepe, pancake, waffles or whatever other yummy thing you want to accomapny it to!  Enjoy!!
