Breakfast can be a little crazy around my household. In the mornings we are up and running, getting ready for school, packing lunches and shoveling in breakfast. I’m sure you have heard how breakfast is one of the most important meals of the day. So although I might not always have the time to cook a big, healthy breakfast; I DO have easy recipes that are healthy and delicious. One of my favorites is this mug muffin recipe. I love me some mug recipes and have even shared a Healthy Chocolate Mug Cake Recipe in the past. Well, this Skinny Oat & Fruit Mug Muffin has been a regular addition to our breakfast time meals.
Skinny Oat & Fruit Mug Muffin Recipe
1/4 cup quick oats
1 tsp almond milk
1/2 tsp vanilla extract
1 strawberry (thinly sliced)
1/2 mashed banana
1. Make sure banana is mashed and add the rest of ingredients into the mug. If batter is not a liquid consistency, add more milk.
2. Microwave for about a minute, make sure the batter is completely cooked through. If not, microwave until it is completely cooked.
3. Invert onto a plate and add optional sugar-free chocolate syrup
