Granola, the snack of champions. It’s one my favorite foods, I love it so much I believe it should have it’s own food group! Seriously though, not only is granola a tasty and filling snack but it’s the best breakfast cereal around. However, granola can become a bit “pricey”, especially considering it is so cheap to make. Not only is it cheap and easy to make, but you can also get creative with it! Check out this Skinny Peanut Butter Cup Granola recipe.
Skinny Peanut Butter Cup Granola
Ingredients
2 1/2 cups Oats
2 TBS butter
1/2 cup sugar or sweetener
1/8 cup honey
1/2 cup unsweetened cocoa powder
1/4 cup egg whites
1/2 cup peanut butter
1 tsp baking powder
1/8 tsp salt
Directions
1. Preheat oven to 325 degrees. Line baking sheet with foil and spray with nonstick cooking spray.
2. Melt butter and peanut butter in microwave until softened. Add ALL ingredients together and mix well. Spread mixture evenly on baking sheet.
3. Bake for 15 minutes, remove from oven and stir. Spread over baking sheet evenly once again and bake for another 10-15 minutes or until crisp.
5. Remove from oven and completely cool. Break up and store… OR EAT!
