Spinach Mini Pies

I am not a huge fan of spinach, especially cooked spinach, so I was a little reluctant when making this recipe.  I am glad I did!  Not only did I enjoy it but so did my anti-healthy eating husband.  However, I did have to withhold the part about this recipe containing cottage cheese (still haven’t told him, hope he doesn’t read this) or he would have hated it from the start.  We had these for dinner but they would also make a great appetizer… and I think they turned out to be one of my prettier dishes!  Without further ado… here is the recipe for:

Spinach Mini Pies
Ingredients
12 wonton wrappers
1 cup non fat cottage cheese
1/2 cup mozzarella cheese
1/4 cup chopped onion
8oz frozen spinach (thaw and drain well)
3 eggs
1/2 tsp black pepper
1/2 tsp garlic powder
Directions
1.  Spray with Pam (non-stick spray) and line muffin pan with wonton wrappers.
2.  Combine the rest of the ingredients and split evenly into the muffin cups.
3.  Bake for 30-40 minutes in a preheated oven at 375 degrees.
4.  Eat with no guilt!
The BEST part of this recipe?  The calories!!!  
Makes 12 Mini Pies
1 serving = 68 calories (7g Carbs, 2g Fat, 5g Protein)

Hi my name is Christy I'm three years out after my gastric bypass after 10 months I lost 200 pounds very rapidly I'm still losing I've plateaued many times I ended up getting my gallbladder taken out I had a tummy tuck to get rid of my excess belly skin I have went from being type 2 diabetic to know hypoglycemic I am a small 138 pounds and still going down I'm having a hard time gaining weight I'm having a hard time with my blood sugars they're very low iron intake is low my stomach hurts badly after I eat almost makes me not want to eat but I know I have to to live day in and day out I don't know if there's anyone I can turn to anymore because nobody wants to take the time to find out what's really going on and then I read your blog I'm going to go see a doctor soon and if this one can't help me I'm going to suggest them to suggest one that can because I feel like I'm wasting away the quality of life is so low I don't even want to live it anymore she thinks I'm dying and I can't look at her tears anymore it's very depressing and binge on sugar otherwise I get headaches tremors dizzy and so much more after reading your blog I now have at least some options and some fuel behind my suggestions

Thank you for your info!!! I had gastric bypass in 2001. I lost 180lbs!! It was a blessing cause my health was awful. Ive kept my weight off 14yrs. I'm healthy in my weight but have had all the same symptoms as you. I've struggled thru iron difficency anemia for yrs. None of my doctors have recommended iron infusion. My iron and blood count stay extremely low. I am currently taking liquid iron. Side effects are awful...nausea is the worst! My friends and family do not understand me freezing all the time. It could be 90° outside and I am comfy in a hoodie!!!! I would like to hear more info of the effects of gastric bypass or join groups with similar side effects from it. My dizziness and no energy only gets worse. I take prilosec everyday from stomach pain n ulcers. A couple other things that seem related but not sure....my eye sight got worse and my teeth got worse. Never had any problems til gastric bypass. Jus curious if anyone else noticed or had these happenings. My teeth were perfect, no cavities at all. No glasses but now I have to wear them 24/7. Shortness of breath from low iron is effecting me also. No energy whatsoever. In addition to my asthma and chronic bronchitis. I would like to hear from more if they had same conditions who have had gastric bypass. Thank you again for your info.
