I am obsessed with my Blackstone griddle, well should I say my husbands? Since he received his gift on Father’s Day, there hasn’t been a day we haven’t cooked on it and I am enjoying trying out all sorts of different type of recipes on the griddle! Of course there are the traditional type of recipes you can imagine being cooked on a griddle but then there are the fun ones! Yes I called them fun, but the experimenting is my favorite part. I saw someone do this recipe in one of my Blackstone griddle groups and I thought I would give it a try, it turned out amazing!! The recipe was so quick and delicious, it is going to be a staple for get togethers, whenever we can have them again! The kids really enjoyed them as well and have asked for them for lunch after we made this.
All I did was take some Grands biscuits and rolled them out into an oblong shape. I made it long enough for the cheese stick to fit into it. I then placed 3 pieces of pepperoni on the bottom and the cheese stick on top of the pepperonis.
Then as you can see, I just wrapped the biscuits around the pepperoni and cheese sticks. I tried to seal the biscuits well, as not to have any of the cheese spill out when cooking.
Squirt a little oil on the hot griddle, spread it out with spatula, then brown each side of the bosco stick, a few minutes on each side.
Once the sticks are browned, place on a wire rack on the griddle and cover for about 5-10 minutes to let them steam and cook thoroughly through. Remove and enjoy your stick dipped in a nice marinara sauce.
