I’ve been doing well and losing those pounds on the Weight Watchers program, and it really doesn’t even feel like a “diet” but I have to admit, I get stuck on the same old dinner options more and more. I’m a huge fan of using the Blackstone Griddle that I gave my husband for Father’s Day last year, we create all sorts of fun and delicious recipes on it! Recently, we came upon this Mint Chimichurri recipe to add on top of a chicken breast and I was truly surprised by just how much I loved it. We have a garden and we grow our own vegetables and herbs, so I was able to use many of the fresh herbs in my garden when cooking up the meal. Blackstone Griddle Chicken With Mint Chimichurri Recipe
Ingredients
4 chicken breasts
1 cup mint leaves packed
2/3 cup parsley leaves, packed
3 TBS white vinegar
1 TBS olive oil
2 medium garlic cloves
1/4 tsp salt
2/3 tsp crushed red pepper flakes
1 tsp Mrs. Dash garlic seasoning
1 tsp Kinders Italian Chop House Rub
Directions
Trim chicken breast and slice in half lengthwise. Season both sides of the chicken with the Mrs. Dash garlic seasoning and Kinder’s Italian Chop House rub, you may add your own seasonings as you please. Cook on medium/low heat on lightly oiled griddle. I used a digital thermometer to check for “doneness” of the chicken, which was about 20 minutes total.
While chicken breast are resting, put the rest of the ingredients into a food processors and pulse a few times until it is thoroughly chopped and mixed. Remove from food processor and add to the tops of the chicken breasts before serving.
